Chef Ángel León is a pioneering figure in Spanish gastronomy, celebrated for his commitment to sustainability and innovation in seafood cuisine. With six Michelinstars to his name, our visiting chef leads several awarded restaurants, including three Michelin-starred Aponiente***, extensively featured in the highly acclaimed Netflix series Chef’s Table. The establishment also has one-star Green Michelin for eco-friendly practices – named the world’s most sustainable restaurant in 2022 by The World’s 50 Best Restaurants. Ángel Léon helms Alevante** and La Taberna del Chef del Mar in El Puerto de Santa María, where his culinary journey began. At the heart of his work is environmental restoration and marine innovation, showcased at Aponiente, located in a restored 19th-century tide mill in the Bahía de Cádiz Natural Park.
