DAIOS COVE RESTAURANTS IN CRETE WELCOME CHEF PACO MÉNDEZ

Born in Mexico City in 1982, our visiting chef began his culinary career in 1998, studying at the Ambrosia Culinary Center and gaining experience at top Spanish restaurants like elBulli. He worked as an executive chef and consultant for global food companies before moving to Barcelona in 2012. There, he partnered with Albert Adrià to open the Mexican restaurants Niño Viejo and Hoja Santa. In 2015, Hoja Santa earned a Michelin star, making it the fastest Mexican restaurant to achieve this honour and maintaining it for six years. In 2020, during the pandemic, Paco Méndez opened a new restaurant, COME, in the same location as Hoja Santa. The concept merges Mediterranean ingredients with Mexican culture, influenced by the legacy of El Bulli. In its first year, COME earned a Michelin star, a Repsol sun, and other prestigious accolades, solidifying Méndez’s reputation in the culinary world.
