Awarded Best Pastry Chef in 2019 at the FNL Awards and Pastry Chef of the Year in 2020 by Gault & Millau Hellas, Spyros Pediaditakis has trained in some of the most renowned restaurants in Greece and Europe. Having worked in the Georges Blanc*** and the Epicure-Le Bristol *** in France, the Fat Duck *** in England and the Cheval Blanc – Les Trois Rois*** in Switzerland, Spyros returned to Athens and became Head Pastry Chef in 2016 at Spondi restaurant **.The co-founder of Ourse, a boutique patisserie in Athens and seminar consultant on the art of confectionery, Spyros recently published his first book – Notebook: Pastries For Restaurants.
